Blueberry muffin (蓝莓松糕)

今天有客人来,为招待客人就做了一盘blueberry muffin 。蓝莓是NTUC买的,一盒$3.9,应该是今天最贵的原料了。

配方和上次一样,只是加了蓝莓

Ingredients


  • 2 medium eggs
  • 125ml vegetable oil
  • 250ml semi-skimmed milk
  • 250g golden caster sugar
  • 400g self-raising flour (or same quantity plain flour and 3 tsp baking powder)
  • 1 tsp salt

Baking

  • Heat oven to 200C/180C。bake 20-25 min


详细步骤
准备两个大盆,一个放干性材料(普通面粉plain flour, 泡打粉baking powder,盐salt),混合均匀。

一个放湿性材料(蛋,糖,牛奶,植物油),搅拌好后,倒入干性材料的大盆里。我默念30下,就差不多搅拌好,看不到粉了

蓝莓洗好晾干后撒一些面粉,据说这样可以防止蓝莓沉底,不知真假。把蓝莓倒入稍加搅拌就好了

今天用的烤盘装满24个小蛋糕后,还剩下不少面糊batter,只好把能烤12个muffin 的大烤盘也利用起来,能放5个大纸杯。


预热到190度,小蛋糕烤盘放在上层,大muffin 烤盘放在下层,设22分钟。时间到了之后,把上层烤盘拿出来后,又把下层烤盘转移到上层,再烤了3分钟。这样大小蛋糕都烤熟了

第一次用蓝莓,发现烤的过程中好多蓝莓都爆裂了,蓝色汁水流到蛋糕杯里,把杯子染成蓝紫色了。看来在小杯子里放蓝莓是个不明智的做法,蓝莓太大,杯子太小。下次再做蓝莓muffin应该放在大杯子里。

依然是个谜的戚风蛋糕凹底
